Citric acid is an organic compound with the chemical formula HOC(CH₂CO₂H)₂. It is a colorless weak organic acid. It occurs naturally in citrus fruits. In biochemistry, it is an intermediate in the citric acid cycle, which occurs in the metabolism of all aerobic organisms. Citric acid anhydrous occurs as color less crystals or as white, crystalline powder with a strongly acidic taste. It is very soluble in water, freely soluble in ethanol (96 %) and sparingly soluble in ether. Citric acid anhydrous is non-toxic and has a low reactivity.
